Super Simple Apple Crisp

This crisp recipe originated from my time on Star Island. Famously crisp our “If All Else Fails Recipe”. If you burn the cupcakes, torch the pies, and totally mess up the cookies and are on the brink of having nothing to serve for dessert you can always whip up some fruit crisp. It requires no special baking tools or techniques. It’s a very intuitive recipe so trust your gut and make your apple crisp the exact way that makes you happy. And it can easily be made vegan if that’s your thing.

Apples

Sugar

Cinnamon

Nutmeg

Cardamom

Lemon

Oats

Brown Sugar

Vanilla

Butter

Salt

Preheat the oven to 350 degrees.

Peel and cube apples, I used 3 medium sized apples, enough to fill half of the baking vessel of your choice. Toss in a bowl with sugar, I used ¼ cup this time because I don’t love my desserts overly sweet, 1 tablespoon cinnamon, 1 teaspoon nutmeg, 1 teaspoon cardamom, and 1 teaspoon lemon juice. Add to your baking vessel (pie plate, baking dish, pyrex, whatever you got that’s oven safe).

In the same bowl 1 cups oats, 1/2 cup brown sugar, a pinch of salt and a dash of vanilla. I would follow a 2:1 parts oats to sugar, then enough melted butter to make the mixture stick to itself a bit when you squeeze it, about 3 tablespoons. But again, if you are looking for something a bit less sweet turn down the sugar.

To make this recipe vegan swap butter for a neutral oil.

Spread the oat mixture over top of the apples and press down.

Bake for 30ish minutes until the apples are cooked and the top mixture is golden brown and crispy.

Enough hot with whipped cream or vanilla ice cream.
